Four Winds vineyard in Canberra and the Hyatt Regency in Sydney are using food waste to fertilise a vineyard, and then return the resultant wine to the restaurant. The result, Australia's first ‘circular wine’, is called The Circular Vintage Shiraz 2025.

The winner of the 2024 Jimmy Watson Trophy – the Four Winds Vineyard, in the Canberra wine region – was put up for sale today.
