Spanish Cava, grown organically, hand harvested, 10 year maturation prior to release. Made with xarel.lo grapes.

Wow. Amazing nose. So honeyed and smoky and brimful of both stonefruit and grapefruit. Amazing introduction. Palate introduces a saltiness, an earthiness, a minerality. Those honeyed characters come from its 15-year-old status. But this still presents as fabulously fresh, characterful, complex, honeyed and chalky. 95 points.
