There’s a taut control to this sparkling wine. It tastes of green apple and preserved lemon, baked pastry and vanilla, and while it’s slender and straightforward it feels pure and precise. The refreshment factor is high but quality-wise it’s more than that. It’s not really the intention but this wine could/should age well too. 91 points.
