This is altogether excellent. It’s wild and characterful and all the things a small-run sparkling wine should be. Sourdough bread, citrus, woodsmoke and white flower characters run into buttermilk and grilled peach. It’s alive with flavour and then dry, textural, sour and slatey through the finish. It’s a soul-restoring bottle of fizz.
