This is a Brut Nature style of Spanish Cava made with Xarel·lo and Parellada grapes. It’s organically grown on 75-year-old vines, and matured for 10 years prior to release. Respect on every level here.

This is wild. It’s exaggerated in a magnetic way. Earth, salt, chalk, toast, autolysis, nuts. Jamon of a wine; aged, characterful, salty and ripe. So dry, so aromatic, so squeaky in texture, so sherried and so fruity at once. Despite all this exaggeration there’s also a soft, almost mellow aspect. Exotic plus plus was my final impression. 96 points.
