AU$70, 12.5% alcohol, DIAM cork, Beechworth.

Whole bunch pressed, fermented wild in old oak, left on lees for 12 months then put to tirage for 24 months. Ultra low dosage (2 grams/litre). The result: a wonderful sparkling nebbiolo.

Holy moly. This is buoyant and dry and long-flavoured and interesting. It’s a revolution in a bottle. It carries a crimson tinge of colour, it tastes of roses and strawberries and citrus and blossoms, it has a wood-bark note and from start to finish (of the palate, and of the bottle) it feels and tastes enormously pleasurable. Do not hesitate.
