This is quite something. Indeed it’s a fundamentally compelling bottle of sparkling wine. The intensity of flavour, the underlying chalkiness, the frame of steel, fruit and earth, and the spread-and-run of the finish all make for a wine of outstanding quality. The complex hit of umami-and-grapefruit flavour here is worth seeking out in itself. Daosa, once again, proves that its sparkling wines are up with the best of them.
